Avèze is the classic gentian aperitif of the Auvergne, the volcanic highlands of central France where the yellow gentian root has been dug by hand for generations. Made in Riom-ès-Montagnes since 1929, Avèze macerates fresh gentian roots, harvested from the mountains of the Cantal, to capture the plant's bracing, earthy bitterness, then balances it with sugar and a touch of citrus. Bottled at 20% ABV in a generous 1-liter bottle.
The taste is crisp, herbaceous and bittersweet, with earthy gentian root, fresh green herbs and a lively citrus edge on a clean finish. The French serve it the simple way, over ice with a splash of water or tonic and a lemon twist, or top it with cassis. Bartenders use it in place of Suze in a White Negroni or add a dash to a gin and tonic for depth. An essential for lovers of bitter aperitifs.
