Barber Lee Absinthe is a small-batch absinthe blanche from Barber Lee Spirits in Petaluma, California, a craft distillery focused on classic European spirits. The distillers tested 17 herbs and botanicals separately before settling on a blend of eight, including grand wormwood, anise and fennel, distilled on a base of traditional, triple-distilled wine spirit. It is left uncolored, so it is a clear blanche rather than a green verte, and bottled in a 750ml bottle.
The taste is delicate, sweet and floral, with soft anise, fresh herbs and a gentle wormwood bitterness that louches to a milky white when water is added. Serve it the classic way, slowly dripping ice water over a sugar cube, or use it as a rinse in a Sazerac, a splash in a Corpse Reviver No. 2 or a Death in the Afternoon with sparkling wine.
