Casa Limònio is a family liqueur house in Partinico, in the hills west of Palermo, founded in 1992 by Vincenzo Russo and still run by the Russo family. They grow citrus organically, pick the fruit and botanicals by hand in season, and make every liqueur from old family recipes: the raw ingredient is infused in stainless steel, then blended with Sicilian grape distillate, water, and sugar. Nothing is filtered, so the natural oils stay in the bottle along with the color. Topazio is made from the peel of the Tardivo di Ciaculli, a late-ripening Palermo mandarin so rare it's protected as a Slow Food Presidium. It's bottled at 35% ABV, opaque orange from the unfiltered oils. Expect vivid mandarin, candied orange, and floral citrus, smooth and balanced by bright acidity, with a long, clean peel finish. Serve it straight from the freezer as a digestif, or use it as a natural stand-in for triple sec in a margarita or a spritz.
