Castle & Key Restoration Rye Whiskey
Castle & Key Restoration Rye is the flagship rye of the revived Castle & Key Distillery in Frankfort, Kentucky, the 1887 Old Taylor castle that sat derelict for decades before its 2014 restoration. It is distilled in-house from an unusual mashbill of 63% rye, 20% malted barley and 17% corn, and bottled at 50% ABV (100 proof).
Breaking Bourbon found the nose fragrant and complex, with raw grain, Turkish delight, fruit-stripe gum, anise and malt, then caramel, light rye spice and prominent malt character on the palate and a medium finish of rye spice and malt. The high malted-barley content gives it a softer, bready, almost genever-like profile compared with a 95/5 rye, and it makes an excellent Manhattan. Castle & Key describes spice, caramel and a hint of fruit. A whiskey from one of the most beautiful distilleries in Kentucky.
