Celaya is the tequila brand of brothers Matt and Ryan Kalil, both former NFL Pro Bowl linemen, named for their great-great-grandfather José Celaya, who by family account distilled agave spirit in Sonora in the late 1800s. The tequila is made at NOM 1438, Destiladora del Valle de Tequila (Casa Maestri) in the town of Tequila, Jalisco, from a proprietary blend of highland and lowland blue Weber agave, and it is certified additive-free, so the color and flavor come from the barrel alone. The Añejo spends well over a year in ex-bourbon American oak, 15 months by the distillery's spec, and is bottled at 40% ABV. Celaya describes it as dark and layered with spice and barrel, a smooth wood finish and sweet agave underneath, richer than the reposado but still tied to the plant. Drinkhacker's review found dark chocolate and dusty cocoa with well-managed wood tannin, called it a tequila to drink with or as dessert, and gave the añejo an A-, the highest mark in the lineup. One dollar from every bottle goes to affordable housing for agave farmers and distillery workers in Jalisco. Pour it neat or over a single large cube.
