Cenote Cristalino Añejo Tequila
Cenote Cristalino is the Cenote Añejo with the color taken out. The tequila is made at Fábrica de Tequilas Finos, NOM 1472, in the town of Tequila, Jalisco, at the foot of the Tequila Volcano, by master distiller Arturo Fuentes Cortés, a 35-year veteran who once distilled Cognac in France. It starts as 100% blue Weber agave, fermented in stainless steel and double distilled in copper and silver pot stills with volcanic water from the distillery's own artesian well. It then ages more than a year in American oak as an añejo before being passed through activated carbon, which strips out the amber color while leaving the aromatics and the softness that the barrel put in. Bottled at 40% ABV. Fuentes' stated aim was to capture the delicate notes of the Cenote Añejo in a clear spirit, and the distillery's tasting note is slightly sweet vanilla, fresh-cut herbs, dark chocolate and cinnamon spice, finishing on toasted spice. It arrived in the US in March 2019 and went nationwide in 2023. Serve it well chilled and neat, the way cristalinos are drunk in Mexico.
