Cenote Reposado Tequila
Cenote Reposado is the rested expression from the Stoli Group tequila brand launched in 2018, named for the Yucatán's freshwater sinkholes but made in the heart of the Tequila Valley. The distillery is Fábrica de Tequilas Finos, NOM 1472, in the town of Tequila, Jalisco, at the foot of the Tequila Volcano, where master distiller Arturo Fuentes Cortés, a 35-year veteran who once made Cognac in France, works with master blender Alejandro García Páez. It is 100% blue Weber agave, fermented in stainless steel and double distilled in copper and silver pot stills, with water from the distillery's own artesian well filtered through reverse osmosis, carbon and silver ions. The reposado rests three months in American oak bourbon barrels and is bottled at 40% ABV. The distillery describes it as a balance of vanilla and wood with spice and a fresh green-vegetable note from the agave, and it won gold at the Spirits Business Tequila and Mezcal Masters. Three months is enough oak to round the edges without turning it into a whiskey substitute: fine neat, better in a reposado margarita, and a real upgrade for a Paloma.
