Chavo Malo Blanco is a 100% blue Weber agave tequila produced at Tequilera Don Roberto, NOM 1437, in the Tequila Valley lowlands of Jalisco, the same distillery behind Don Roberto, Huizache and the Tanteo infused tequilas. The agave is grown in the volcanic soils around the town of Tequila and left in the field for up to twelve years before it is hand harvested. Production is modern rather than traditional: the piñas are cooked in an autoclave with diffuser extraction, fermented in stainless steel tanks, and double distilled in a column still, then bottled unaged at 40% ABV. The brand's own description calls it full-bodied yet clean, with pineapple, green herbs and earth on the palate, and pitches it as complex enough to sip but built for mixing. That is how most drinkers use it: at this price it is a ranch water, margarita and paloma tequila, and the label is one of the more recognizable ones on a back bar.
