Clear Creek Apple Brandy 8 Year Old
Clear Creek Distillery was founded in Portland in 1985 by Steve McCarthy, whose family had owned Oregon orchards since the turn of the twentieth century, to make European-style fruit brandies from Pacific Northwest fruit; it was bought by Hood River Distillers in 2014 and now distills in Hood River. This is its Calvados-style apple brandy, the eight-year reserve. Yakima Valley Golden Delicious apples are crushed and fermented whole, distilled, and aged a minimum of eight years in a mix of used and new Limousin oak, the French barrel wood used for Cognac, then bottled at 40% ABV. Clear Creek says it strikes a near-perfect balance of oak and fruit: delicate on the nose, but the apple comes through loud and clear on the palate, with sweet vanilla, a touch of tannin and a long finish. It is made the way Norman Calvados is made, from fresh fruit rather than concentrate, and older than the six years a Calvados needs to be labeled Hors d'Age, which is the comparison it invites. Drink it neat after dinner, or use it wherever a cocktail calls for aged Calvados.
