Clear Creek Cherry Brandy is Oregon's kirschwasser, made the way the Swiss and Germans make it. Clear Creek was founded in Portland in 1985 by Steve McCarthy, from a family that had farmed Oregon orchards since the turn of the twentieth century, specifically to make European-style eaux de vie from Pacific Northwest fruit; Hood River Distillers bought it in 2014 and production now runs in Hood River. For this bottle, sweet cherries from Oregon and Washington are crushed, fermented and distilled in the distillery's traditional European pot stills, then bottled without any time in oak at 40% ABV. Nothing is added: no sugar, color or flavoring, which is what separates a true kirschwasser from a cherry liqueur or a cherry-flavored brandy. Like all unsweetened eaux de vie it is dry and clear, the fruit showing up as aroma rather than sweetness; tasters describe an intense nose with earthy, nutty notes and a palate of cherry and almond, and note that it rewards familiarity more than a first sip. Use it the way kirsch is used in Europe: in cheese fondue, Black Forest cake, a Rose cocktail, or chilled after dinner.
