Comte Louis de Lauriston 100% Poiré Calvados Domfrontais
Comte Louis de Lauriston 100% Poiré is an unusual Calvados Domfrontais distilled entirely from perry pears rather than the usual pear-and-apple blend. The Domfront region of southern Normandy is famous for its towering perry pear orchards, and the Domfrontais appellation, recognised in 1997 after a campaign led by Count Louis de Lauriston himself, requires a minimum of 30% pears; this bottling takes that signature to its logical conclusion. The pears are grated and pressed, the perry ferments slowly in wooden casks through the winter, and the dry perry is distilled in a single pass through a column still, the traditional method of the Domfrontais. The eau-de-vie then rests about five years in old oak barrels so the wood stays in the background, and it is bottled at 40% ABV. The producer describes a light golden colour, a very fresh and fruity nose of pear and white fruits such as peach, and an elegant palate with vibrant acidity. The Calvados is made at the Chais du Verger Normand in Domfront, founded in 1962 and operated in partnership with Christian Drouin since 1992, whose cellars hold vintages back to the 1950s.
