Corzo is the highland tequila from Bacardi, distilled at Tequila Cazadores de Arandas, NOM 1487, in Los Altos de Jalisco. The name honors Chiapa de Corzo in Chiapas, the town where some of the last Indigenous resistance to the Spanish conquest took place. Corzo's method is built around repetition: it uses 100% blue Weber agave from the highlands, about twice the usual amount per bottle because only a narrow center cut is kept from each distillation, and every expression is triple distilled. The Reposado is also aged twice. After the second distillation it rests two to four months in American white oak, and after the third it spends a further three to six months in French oak before bottling. Right before bottling the tequila is sparged, a Corzo process that introduces microscopic oxygen bubbles to open it up. In The Rum Howler's review it pours pale straw, with honey, vanilla, almond, coconut, lemon zest and grilled pineapple on the nose over agave and white pepper, then a palate of honey and mixed fruit that turns to peppery, herbaceous agave with cinnamon and vanilla pudding, and a finish of almond, citrus and fading honey.
