Curado Blanco Tequila
Curado is a tequila built on an old idea, the pulque curado, the traditional agave drink flavored by infusion. The brand comes from the Estes and Camarena families, the people behind Tequila Ocho, El Tesoro and Tapatio, and was inspired by Ocho founder Tomas Estes, who wanted a tequila naturally and lightly sweetened by the fructose in cooked agave fibers. This is the original blue Weber expression. The base is a 100% blue agave blanco from NOM 1474 in the Los Altos highlands of Jalisco, cooked in brick ovens, crushed on a roller mill, fermented open-air in wooden tanks and double-distilled in copper pot stills. Curado then submerges about 21 kilograms of roasted blue agave in natural-fiber bags for every 1,000 liters of 100-proof blanco, lets it steep for five days, filters out the fibers and proofs the spirit down to 40% ABV. The pale tint comes from that infusion, not from barrels; the tequila is unaged. Reviewers on Tequila Matchmaker pick up pronounced cooked agave with pepper, honey, cinnamon and minerality over a medium finish. Pour it anywhere you'd use a blanco, or sip it side by side with a standard blanco to taste what extra cooked agave does.
