Del Bac Mesquited Cask Sentinel Straight Rye Whiskey Batch No. 1 is the Southwest's answer to rye, from Whiskey Del Bac in Tucson, Arizona. Del Bac built its name on American single malt made from barley smoked over mesquite instead of peat, and Sentinel applies that desert signature to a classic rye for the first time.
The base is a blend of two- and three-year-old straight ryes from Indiana with a 95% rye, 5% malted barley mash bill. Del Bac finishes it in freshly emptied casks that held its mesquite-smoked single malt, then filters it across a bed of mesquite charcoal produced during its own malting process, before bottling at 92 proof. A hot Sonoran summer does the rest. The mesquite is a background note rather than a smoke bomb, lending a soft, savory roundness to the peppery rye. Sentinel is a limited release named for the saguaro cacti that stand watch over the desert, and it makes an interesting Old Fashioned with a whisper of campfire.
