Don Alberto Extra Añejo Wine Cask Finished Tequila
Don Alberto is the tequila line from Tequilera Puerta de Hierro, NOM 1477, a distillery in the Los Valles region of Jalisco. The house process is traditional at its core: 100% blue Weber agave cooked in stone and brick ovens, crushed on a roller mill, fermented in stainless steel tanks, and double distilled in stainless steel pot stills. This extra añejo is built with whiskey drinkers in mind, and its aging is the story: two years in French oak barrels, then one additional year in medium-charred American white oak, for three years in wood in total, the minimum that defines the extra añejo category. It is bottled at 40% ABV (80 proof). All that time in barrel shapes the profile, with warm brown spice, dried fruit and vanilla up front and oak running from the first aroma through the finish, on a sweet-leaning, lighter-bodied frame. Pour it neat in a snifter or over one large cube so the oak and fruit have room to open.
