Donum farms its Russian River Valley estate in Sonoma County, where Pacific fog and westerly winds keep the climate cool and the acidity bright. The Pinot Noir grows on 14 acres planted to a mix of clones, and the winemaking is deliberately hands-off: each lot ferments separately in open-top stainless steel tanks with native yeast, using free-run juice only, and the wine is aged in French oak. Bottled at 13.9% alcohol, it opens with dusty black cherry and Bing cherry, then moves toward shiitake, cola spice, forest floor and white pepper. The palate shows dark cherry and black plum with cocoa powder, sandalwood and a hint of strawberry-rhubarb, all in a velvety texture with clean acidity and firm structure. The finish is dry and long, with plush tannins and a lingering mineral note. It pairs well with roast duck, seared lamb chops or a mushroom tart. A solid choice for anyone who likes Russian River Pinot with depth and savory character. 750ml bottle. Vintages may vary; we ship the current release.
