It is distilled in copper pot stills from an unusual mash of malted barley, unmalted barley and Irish oats, a nod to old Irish recipes, and matured in bourbon and Oloroso sherry casks before bottling at 43% ABV (86 proof).
The oats give it a velvety, creamy texture. Honey and orchard fruit lead on the nose, followed by the peppery spice that defines pot still whiskey, a touch of dried fruit from the sherry wood, and a smooth, medium-long finish.
