Eda Rhyne Distilling Company was founded in Asheville, North Carolina in 2018 by Rett Murphy, an organic farmer and distiller, and Chris Bower, a bar owner, forager, and student of Appalachian folk medicine, and it takes its name from an old Appalachian ghost story. The idea is Italian-style amari made with the plants of the Southern mountains. Bitter Tooth is their take on the classic Italian red bitter, the Campari style, launched in 2024 after years of reformulation. More than twenty botanicals, many wild-foraged, are macerated in stages in a non-GMO corn spirit, among them gentian, wormwood, cinchona, yarrow, rhubarb root, sarsaparilla, cherry bark, spicebush, hibiscus, cardamom, juniper, citrus peel, and vanilla. It rests two months in stainless steel, is sweetened with cane sugar, colored naturally with black carrot and hibiscus instead of dye, and bottled unfiltered at 42% ABV. Expect citrus peel, cardamom, juniper, and vanilla on the nose, a broad, honeyed palate framed by layered bitterness, and a long finish. Pour it over ice with seltzer, or build an Appalachian Negroni with gin and a light sweet vermouth.
