Kamitaka means "divine hawk," and the Hawk Label Ginjo is Eigashima Shuzo's newest sake release for the American market — from a brewery most Americans know for something else entirely. Founded in 1888 in Akashi, Hyogo Prefecture at the mouth of Osaka Bay, Eigashima registered the Kamitaka brand in 1895 and became Japan's first licensed whisky distillery in 1919, producing Akashi Whisky alongside sake, shochu, mirin, wine, and brandy ever since — still using seven historic wooden storehouses built between 1889 and 1959. The region has real pedigree: western Akashi was once known as Nada, where good spring water and high-quality Harima Plain rice made sake brewing famous. This Ginjo uses local Hyogo-grown hinohikari rice polished to just under 60%, brewed with snowmelt water from Mt. Rokko, landing at SMV +3.7 and 15% ABV. The result is richly aromatic without being showy — fresh ripe pear and juicy melon over crystalline minerality, clean and refined with a gently dry finish. A versatile food sake at a fair price: excellent with grilled fish, tempura, roasted vegetables, and mild soft cheese. Serve chilled.
