El Nivel Añejo Tequila
El Nivel Añejo is the longest-aged expression from El Nivel, a 100% blue Weber agave tequila made from single-estate agave in Jalisco's Tequila Valley under NOM 1480 (earlier bottlings came from NOM 1549). The distillery sticks to traditional methods for the base spirit: the agave is slow-cooked in stone and brick ovens, crushed on a roller mill, fermented in stainless steel tanks, and double distilled in a stainless pot still with a copper coil. To be labeled añejo, a tequila has to spend at least one year, and less than three, in oak barrels of 600 liters or smaller, so this bottling has seen considerably more wood than the El Nivel reposado. That time in barrel deepens the color and brings more oak into the profile, while the valley-grown agave that defines the blanco remains the foundation. It completes the El Nivel range alongside the blanco and reposado, and it is the one to reach for when you want a tequila to sip: pour it neat, over a single large cube, or use it in place of whiskey in a tequila Old Fashioned with a dash of bitters and an orange peel.
