El Nivel Blanco Tequila
El Nivel is a 100% blue Weber agave tequila made in the Tequila Valley of Jalisco from single-estate agave, currently produced under NOM 1480 (earlier bottlings came from NOM 1549). The production is traditional where it counts: the agave is slow-cooked in stone and brick ovens, crushed on a roller mill, fermented in stainless steel tanks, and double distilled in a stainless pot still fitted with a copper coil, so the spirit still touches copper on its way out. The blanco is bottled unaged, which makes it the clearest read on the distillery's valley-grown agave. Tasters on Tequila Matchmaker point to sweet minerality and green pepper up front with a peppery finish, and several single out a silky, balanced texture that stands out among value-priced blancos. That profile makes it a natural house pour for margaritas, Palomas and Ranch Waters, and it holds up chilled and neat as well.
