El Nivel Reposado Tequila
El Nivel Reposado is the oak-rested expression of El Nivel, a 100% blue Weber agave tequila made from single-estate agave in Jalisco's Tequila Valley under NOM 1480 (earlier bottlings came from NOM 1549). The base spirit is made the traditional lowland way: agave cooked slowly in stone and brick ovens, juice extracted on a roller mill, fermented in stainless steel tanks, and double distilled in a stainless pot still with a copper coil. As a reposado, it rests in oak barrels for between two months and a year, the window Mexican tequila regulations set for the category. That is long enough for the spirit to pick up color and have its edges rounded by the wood, while keeping the valley agave at the center of the glass. It sits between the unaged blanco and the longer-aged añejo in the El Nivel range, which makes it the most flexible bottle of the three: rich enough to sip over a large cube, and bright enough to build a reposado margarita, a Paloma or a tequila and soda without losing the agave underneath.
