Elizabeth Spencer Rutherford Cabernet Sauvignon
Elizabeth Spencer was founded in 1998 by Elizabeth Pressler and Spencer Graham, a husband-and-wife team who ran their tasting room out of Rutherford's 1872 post office building, and the winery is now part of the Boisset Collection with its Rutherford focus intact. This Cabernet Sauvignon is 100% Cabernet from the Rutherford bench, where mild temperatures and a long growing season let the fruit ripen slowly while keeping balanced acidity. It is aged 24 months in French oak and bottled at 14.0% ABV in 750ml. The wine pours deep ruby and opens with black currant, chaparral and red fruit layered with clove, nutmeg and cedar from the barrel, then turns full-bodied on the palate with savory fresh herbs and ripe, concentrated black fruit. The tannins carry the silty, dusty texture that defines Rutherford soil, framed by integrated acidity and a lingering finish. It is youthful and a little brooding, so decant for an hour or cellar it for several years. Pair it with lamb, steak or herb-laced risotto. Vintages may vary; we ship the current release.
