Fee Brothers is one of the oldest producers of cocktail bitters in the United States, a family business that traces its roots to 1864 in Rochester, New York, where it still operates from Portland Avenue, now in its fifth generation of family ownership. Celery bitters were a common cocktail ingredient in the 19th century, and Fee Brothers launched its own version in February 2011. The recipe is simple and non-spirit based: water, glycerin, natural celery flavoring and spice extracts. It comes in the company's signature hand-wrapped bottle. Celery bitters are the finishing touch for savory drinks, and the obvious place to start is a Bloody Mary or Bloody Maria, where a few dashes sharpen the tomato and spice. They are also a good match for gin: add a dash to a dry Martini, a Gibson or a gin and tonic, or use them in a Michelada or a vodka soda. Bartenders use them in aquavit and blanco tequila drinks as well, and a dash in a glass of tomato juice or sparkling water makes a quick no-alcohol option.
