Fee Brothers Lemon Bitters come from the Fee family's business in Rochester, New York, which traces its roots to an 1840s butcher shop and a wine and liquor store the family opened in 1864 (the label says 1863 because a grandfather liked how it rhymed in a limerick). The company survived Prohibition making cordial syrups and altar wine, turned to cocktail mixers in the 1950s, and is now run by the fourth generation, Joe and Ellen Fee. Lemon bitters joined the lineup in 1994, one of the flavors Ellen Fee added alongside grapefruit. Like most of the Fee range, they are built on a glycerin base rather than high-proof alcohol: glycerin, lemon oil, lemongrass oil and other natural flavors, water and citric acid. Difford's Guide describes a pale straw color, an aroma of lemon zest and lemon meringue, and a palate of intense lemon zest and lemongrass that reads tart rather than bitter. A few dashes brighten a gin Martini, a Tom Collins, a whiskey sour or a vodka soda, and they work in lemonade and iced tea too. Sold in the 5 oz dasher-top bottle.
