Fuego y Humo is a small-batch mezcal brand built around a simple mission: help Mexican producers keep making exceptional agave spirits the traditional way, and teach drinkers about the families behind them. Its Espadín comes from José Manuel Méndez, a third-generation mezcalero in San Dionisio Ocotepec, a village in the Tlacolula region of Oaxaca, and is certified under NOM O735X. Espadín (Agave angustifolia) is the backbone of Oaxacan mezcal, and Méndez works it with his family's ancestral methods: the agave hearts are roasted in an underground pit oven, crushed with a stone tahona, fermented with natural, wild yeasts in pine wood tanks, and double distilled in copper stills. It is bottled unaged as a joven at 47% ABV. The brand describes sweet aromas of caramel and cream with soft smoke, plus hints of berries, orange zest and cream soda over a subtle minerality, and reviewers at Mezcal Reviews add pie crust, vanilla, brown sugar and butter cookie with a peppery, earthy balance. Smoke here is a supporting note, not the headline, which makes it a great sipping Espadín for newcomers and a rich base for a Mezcal Negroni or Oaxaca Old Fashioned.
