Fuego y Humo Tepeztate Mezcal
Fuego y Humo is a small-batch mezcal brand dedicated to empowering traditional Mexican producers, and its Tepeztate is one of the rarest bottles in the lineup. It comes from maestro mezcalero Felipe Vásquez Reyes in Miahuatlán, Oaxaca, and it is imported by Skurnik. Tepeztate (Agave marmorata) is among the slowest-growing agaves in Mexico: these plants grow wild for 20 to 25 years, often clinging to cliff faces at high elevation, before harvest. The piñas are cooked in a conical earthen pit oven, crushed with a stone tahona, fermented in open-air wooden tinas, and distilled twice in copper pot stills fitted with a hybrid refrescadera condenser. It is bottled at around 47% ABV, varying slightly by batch. The importer's notes describe an especially vibrant take on the varietal, with green banana, delicate flowers, bright bell pepper, Sichuan peppercorn and underripe melon rind. Tepeztate's green, spicy character is the opposite of a sweet, smoky Espadín, so pour it neat in a copita, sip slowly, and save it for when you want to taste what two decades in the wild does to an agave.
