Fuego y Humo is a mezcal brand built around small family producers in Oaxaca, with a stated mission of supporting the people who make the spirit and teaching drinkers about agave and the traditions behind it; the name, fire and smoke, refers to the two elements that turn agave into mezcal. This Tobalá comes from José Manuel Méndez, a third-generation mezcalero working in San Dionisio Ocotepec, Oaxaca, under NOM O735X. Tobalá is wild Agave potatorum, and José drives for hours into remote country and then hikes further into the hills to find mature plants worth harvesting. The piñas are roasted in an underground pit oven, crushed with a stone tahona, fermented in pine wood tanks with wild, open-air yeasts, and double distilled in copper, then bottled at 47% ABV. The brand calls it the friendliest of its lineup: sweet cream frosting through both the nose and the palate, notes of vanilla, cinnamon and white chocolate, and a woody finish. It's a natural bridge for tequila drinkers moving into mezcal, and a rewarding sipper for anyone who already knows what wild agave can do.
