Gekkeikan Horin Junmai Daiginjo is the flagship of the Kyoto brewery founded in 1637 by Jiemon Okura in Fushimi, the sake district whose soft spring water has fed brewers for centuries; the company name means "laurel crown," and Gekkeikan went on to open Japan's first sake research institute in 1909 and to become the best-selling sake in the United States. Horin is brewed in Fushimi, not at the company's California plant, from a blend of Yamada Nishiki and Gohyakumangoku, the two most prized sake rices in Japan, polished to 50 percent of the grain, the daiginjo threshold, with no added distilled alcohol, and bottled at 16.4% ABV in a 720ml bottle dressed in gold foil and a black cord. The brewery describes creamy rice, banana and fresh cheese on the nose, followed by melon, pear, Asian pear and green apple, a smooth palate of banana, apple and fresh cheese turning to savory mushroom and chestnut umami, full yet refreshing and medium-dry, and a long finish with faint prune; Drinkhacker rated it A-. Serve it chilled or at room temperature in a wine glass to bring out the aromatics, and pair it with sashimi, grilled fish or a dinner where it can take the place of a white Burgundy.
