Gekkeikan Traditional is the best-selling sake in the United States and the bottle most Americans met sake through, brewed at Gekkeikan's Folsom, California, brewery, which the Kyoto company founded in 1989 on Sierra Nevada snowmelt water and California-grown Calrose rice to bring its heritage, dating to 1637 in Fushimi, Kyoto, to America. It is a junmai, meaning rice, water, koji and yeast with no added distilled alcohol, bottled at 15.6% ABV in the classic 750ml green bottle with the red-and-gold label carrying the laurel-crown characters that gave the company its name in 1905. Drinkhacker rated the Folsom junmai A- and found melon, blossom, white chocolate, matcha and a hint of nutmeg, slightly sweeter than expected with a saline finish, and called it a steal for the price. It is the definition of a house sake: clean and dry enough to serve hot in a tokkuri, soft enough to pour chilled, and inexpensive enough to cook with, where its umami lifts marinades, teriyaki and steamed fish. Serve it warm, chilled or at room temperature with sushi, tempura, teriyaki, dumplings or a bowl of ramen.
