The Junmai Daiginjo is the top of Gochoda Brewery's Azumaichi line, and it comes from the same unusual foundation: a brewery whose motto is "sake that starts from growing rice," cultivating its own Yamada Nishiki on site in Saga Prefecture for more than 30 years. That estate-grown rice is milled here to an exacting 39%, brewed with house-cultivated Kyokai #9 yeast and deliberately slow low-temperature fermentation — a difficult process the toji reportedly times by experience rather than instruments, with steamed ginjo rice still hand-cooled and fanned by the whole crew in the old style.
