Gochoda Brewery's motto is "sake that starts from growing rice," and they mean it literally — the brewery has grown its own Yamada Nishiki on site in Saga Prefecture for more than 30 years, which almost no brewery does. Azumaichi ("Eastern Legend") has become one of Kyushu's most sought-after brands as a result: stocks are snapped up on release in Japan and it pours in Michelin-starred restaurants. This Junmai Ginjo uses that estate-grown Yamada Nishiki milled to 49% with house-cultivated Kyokai #9 yeast and soft water from the Kitayama Mountains, fermented deliberately at low temperature — slow and hard to control, but worth it.
