Description:  Gracias a Dios translates to "Thank God," a phrase that owners, Pablo López, Enrique Jiménez, Xaime Niembro and Oscar Hernandez heard throughout their childhood. A deep commitment to family values and Mexican culture underline their approach to producing handmade, ultra-premium quality mezcal and agave gin. Gracias a Dios values its people and the environment, employing eco-friendly practices that include water conservation, solar energy and recyclable materials and proudly offering local employees fair wages. Proudly Mexican, the Gracias a Dios Agave Gin is handmade with 32 botanicals from Mother Earth, to represent the 32 states of the Mexican Republic. Deliver the rich spirit of Mexico by mixing this Mexican Gin in a classic. The Gracias a Dios team collects the agaves from their plantations to extract the agave hearts, which are cooked for 4 days in traditional wood ovens. The cooked agave is then grinded with a rock pulled by a horse. While the first distillation brings the fermented juice to 110 proof/55 ABV, the second distillation is used to macerate the botanicals for 12 hours in a tank. A third distillation occurs, same as second, to achieve a more neutral agave spirit with more concentrated presence of botanicals. The Agave Gin is double filtered and bottled by hand at certified facilities in Matalan, Oaxaca. Color : Clear. Nose : A symphony of citrus notes -grapefruit, lemon and tangerine. Palate : Light bodied, with noticeable acidity, this presents an ensemble of citrus notes, led predominantly with juniper notes and a finish sprinkled with black pepper and cardamom.
