Hakutsuru Draft Sake
Hakutsuru Draft Sake is a fresh, lively junmai from Hakutsuru, the Kobe brewery founded in 1743 in Japan's famous Nada sake district. "Draft" refers to the namachozo method: the sake is stored cold and unpasteurized, then pasteurized only once at bottling, which preserves a brighter, fresher character than conventionally twice-pasteurized sake.
It is light and smooth, opening with sweet rice, subtle nuttiness, and fresh pear, then showing green melon, young coconut, and light cream on a crisp palate with gentle acidity and a slightly dry finish at 14% ABV. Serve it well chilled with sushi, seafood, salads, and light dishes, or on its own on a warm evening. This 300 ml bottle is an easy everyday pour and a great first sake for anyone curious about the category.
