The Breezeway is Spike Marble's home bar and the set of his long-running YouTube channel, Breezeway Cocktail Hour — where Ed Hamilton became a frequent guest. After several appearances, Ed agreed to work with Spike and his audience to blend a rum that would add another dimension to daiquiris and long drinks. The result combines Hamilton's White 'Stache, an 87-proof white rum drawing distillate mostly from Trinidad plus Guyana and the Dominican Republic, with a smaller proportion of Hamilton Jamaican Pot Still Blonde — Worthy Park distillate aged one to two years. Bottled at 42.5% ABV with a faint straw color and no added sugar. Expect tropical fruit and ripe banana on the nose with a hint of hogo and a subtle grassy, sugarcane edge, opening into pineapple, coconut, and mineral brightness, finishing clean and lively with a touch of pepper. Comparisons to Probitas come up constantly on RumRatings — plenty prefer this one for its dryness in a daiquiri, though a few find Probitas funkier. Ultimate Mai Tai found it made a surprisingly fine Mai Tai despite leaning light. A genuinely excellent mixing rum.
