Heavensake Junmai 12 is the entry to the French-Japanese sake house founded in 2016 by Régis Camus, the Champagne chef de cave named Sparkling Winemaker of the Year eight times by the International Wine Challenge, who applies the Champagne craft of assemblage to sake by blending different sakes with a brewery's toji into a single balanced cuvée. This one is made with Konishi Shuzo of Itami in Hyogo Prefecture, one of Japan's oldest breweries, in operation since 1550, from sakes polished between 50 and 70 percent, some to daiginjo level, brewed on soft water and blended by Camus rather than bottled from one tank. The name is the proof: it is bottled at 12% ABV, well below the usual 15 to 16, with a sake meter value around +2 and 1.7 acidity, so it drinks light and dry rather than sweet. The Japanese Bar found it more aromatic than most junmai, with walnut, toasted cashew, caramel and steamed brown rice on the nose and a light-bodied but rich palate of crème brûlée, milk chocolate, coconut, banana and strawberry over a bright mineral finish. It comes in a 720ml pale-gold teardrop bottle with a grey cap. Serve it chilled in a white wine glass with sushi, oysters, roast chicken or a cheese board.
