Heavensake Label Azur is the junmai ginjo assemblage from the French-Japanese sake house founded in 2016 by Régis Camus, the Champagne chef de cave named Sparkling Winemaker of the Year eight times by the International Wine Challenge, who applies the Champagne craft of assemblage to sake by blending different sakes with a brewery's toji into a single balanced cuvée. This one is made with Dewazakura, the Yamagata brewery founded in 1892 in the snowy valleys of northern Honshu that helped launch Japan's ginjo boom in the 1980s by selling premium ginjo at everyday prices. The rice is polished to 50 percent, past the ginjo threshold and into daiginjo territory, with no added distilled alcohol, and the blend is bottled at 15% ABV with a sake meter value of +2 and 1.5 acidity in a 720ml sky-blue teardrop bottle. The house describes green apple and fresh mint with pear and grape on the nose, and a lively palate of pome fruit and minerality, somewhat dry with moderate acidity and a silky finish. Serve it chilled at 45 to 50°F in a white wine glass with sashimi, oysters, ceviche or grilled white fish; opened, it holds up to four weeks in the fridge.
