Heavensake Label Orange Junmai Daiginjo Sake Régis Camus x Urakasumi

Heavensake Label Orange is the junmai daiginjo from the French-Japanese sake house founded in 2016 by Régis Camus, the Champagne chef de cave named Sparkling Winemaker of the Year eight times by the International Wine Challenge, who applies the Champagne craft of assemblage to sake by blending different sakes with a brewery's toji into a single balanced cuvée. This one is made with Urakasumi, the Saura family's 290-year-old brewery in Shiogama, Miyagi Prefecture, now led by thirteenth-generation president Koichi Saura, from a blend of Kura no Hana, Miyagi's own sake rice, and Yamada Nishiki, polished to 40 to 50 percent of the grain, fermented with two of Urakasumi's proprietary yeasts including Kyokai 12 and the soft water of Miyagi, with no added distilled alcohol, sugar, sulfites or additives. It is bottled at 16.9% ABV in a 720ml black teardrop bottle with an orange collar and took a Gold Medal at the 2022 New York World Wine & Spirits Competition. The house describes pineapple, lychee, green apple, melon, blossom, white lily, dried fruit and steamed rice on the nose, a silky, slightly rich palate of layered umami and smooth acidity, and a clean, refined finish. Serve it chilled in a wine glass with lobster, uni, sashimi, carpaccio, cheese or caviar.
