Henri Bardouin Pastis is a 750ml, 90-proof grand cru pastis from Distilleries et Domaines de Provence in Forcalquier, France. Unlike mass-market pastis built on anise alone, Henri Bardouin is made with a blend of 65 plants and spices, including star anise, licorice, fennel, thyme, sage, cardamom, black pepper, wormwood and many wild herbs of the Haute-Provence hills.
The result is a complex, aromatic pastis with layers of spice and herb beneath the anise. Serve it the traditional way, one part pastis to five parts cold water, and watch it turn cloudy, or add it to a cocktail for a Provencal accent.
