Herzog Wine Cellars in Oxnard, California, is the flagship winery of the Herzog family, whose winemaking roots reach back to 19th-century Czechoslovakia and whose Royal Wine Corp. is the largest producer of kosher wine in the world. The Special Reserve tier is where head winemaker Joe Hurliman, who has led the cellar since 1999, concentrates the best of Herzog's appellation Cabernets, and this bottling comes from Alexander Valley in northern Sonoma County, a warm, river-carved valley known for plush, generous Cabernet Sauvignon. The grapes are destemmed and cold-soaked for two days before fermentation, racked once, then put through malolactic fermentation and aged in tight-grain 225-liter French oak barrels, a mix of new and two-year-old wood. The winery describes a full-bodied wine of blackberry, cherry and licorice aromas, with mocha and vanilla from the barrels, ample but smooth tannins and a balanced finish, at 14.5% ABV. It is kosher for Passover, mevushal, and a serious steak wine for grilled ribeye, lamb or brisket. Vintages may vary; we ship the current release. 750ml bottle.
