High N' Wicked Foursquare Rum Cask Finished Irish Whiskey

High n' Wicked is an independent bottler of Irish whiskey, with releases selected by Noel Sweeney, the former master distiller and master blender at Cooley, and distributed in the U.S. by Altamar Brands. For this collaboration Sweeney worked with Richard Seale of Foursquare Rum Distillery in Barbados, one of the most respected names in rum. The base is a single grain Irish whiskey distilled in County Cork from a mash of 95% French maize and 5% malted barley, matured in ex-bourbon barrels. It was then finished for six months in casks that had held Foursquare's Mark X 2007, a vintage Barbados rum from the distillery's Exceptional Cask Selection, and bottled at 100 proof (50% ABV). Seale described the pairing as a highly expressive and complex Barbados rum married to the nuanced, subtle character of the single grain whiskey. Single grain Irish whiskey is light and sweet by nature, which gives the rum cask room to show, and reviewers have picked up mild vanilla and tropical floral hints on the nose, with sticky toffee pudding and caramel pecan pie on the palate.
