Idle Hands 5 Year is a limited straight bourbon from Proof and Wood, the independent bottler behind Tumblin' Dice, made in collaboration with Idle Hands, the East Village bar in New York that has since closed. The whiskey was distilled in Indiana in 2015 from a high-rye mash bill of 60% corn, 36% rye and 4% malted barley, a recipe that pushes rye spice well past the typical bourbon. It was aged five years, and it comes from the same high-rye barrels Proof and Wood used for its Tumblin' Dice bourbon, so this is effectively a sibling bottling released under the bar's name. Only two small batches were made. It's bottled at 48% ABV (96 proof) and non-chill filtered, keeping the oils and texture that filtering would strip out. Proof and Wood's tasting notes open with shortbread, charred applewood, tart cherry and roasted peanut skin on the nose, then milk chocolate and allspice on a palate with a good balance of texture and tannin. The finish carries red apple skin and toasted rye seed. At 96 proof it drinks well neat, and the heavy rye content gives it enough backbone to stand up in a Manhattan or an Old Fashioned.
