Ionico Mezcal Espadín Joven
Iónico is a mezcal from Tlacolula, in the central valleys of Oaxaca, made by maestro mezcalero Celso Martínez López and certified as Mezcal Artesanal under NOM O349X. It comes from the same company that brings in Nacional mezcal, and it's that team's entry into the cocktail side of the category: a single-agave espadín (Agave angustifolia) bottled young, with no barrel time, at a full 46% ABV (92 proof). The batch reviewed by Mezcalistas ran to just 2,604 bottles. As an artesanal mezcal, it's made under rules that require the agave to be roasted in pit or masonry ovens and fermented and distilled by hand-scale methods, which is where the smoke comes from. Mezcalistas describes the nose as the freshest water you'll ever smell set against a background of roasted agave, and a palate that is light in body but full of classic roasted-agave flavor, with a touch of mesquite and bay leaf. That lighter frame and 46% strength make it a strong mezcal for mixing: use it in a Mezcal Margarita, a Mezcal Negroni, or a Oaxaca Old Fashioned, or split it with tequila in a Paloma.
