Jean Fillioux is a family cognac house working the Domaine de La Pouyade in the heart of Grande Champagne, the premier cru of the Cognac region, where the family has been producing cognac since 1894. Grande Champagne's chalky soils give eaux-de-vie known for finesse and exceptional aging potential, and every drop in the XO Grande Réserve comes from grapes grown exclusively in that cru. The house blends older eaux-de-vie for this XO and bottles it at 44% ABV, a touch higher than the standard 40%, which gives the cognac more weight and carries its aromatics further. The producer describes a subtle balance of vanilla, honey, dark chocolate, candied fruit, mango, orange, and apricot on the nose, and a palate that is full, deep, and balanced with the intensity of the Grande Champagne terroir, soft and powerful at the same time. Serve it neat in a tulip glass at room temperature, with a splash of water if you want to open it up, or alongside dark chocolate after dinner.
