Jokigen Junmai Ginjo "Rice Label" is a textbook Yamagata sake from Sakata Shuzo, a brewery in the port city of Sakata on the Sea of Japan. Yamagata is one of Japan's great ginjo prefectures, and this bottle shows the regional style perfectly: subtle layers of fruit, light sweetness, and a clean, refined structure.
It is made from Oyama Nishiki, a sake rice developed by a group of rice farmers who set out to create the ultimate brewing grain and chose Sakata Shuzo as the brewery to bring out its potential. The sake shows bold notes of cherry and apple balanced by a savory undertone and finishes clean at 16% ABV. Serve it chilled with sashimi, grilled fish, or lightly seasoned dishes.
