JUSTIN Vineyards & Winery was founded in 1981 by Justin Baldwin on the west side of Paso Robles, where it pioneered Bordeaux varieties in the region and built its reputation on the ISOSCELES blend. Today the winery is owned by The Wonderful Company and winemaker Scott Shirley leads a team that sorts, ages and blends every lot before deciding what makes the cut. The Reserve Cabernet Sauvignon is a single-varietal selection from the same quality tier of Paso Robles fruit as ISOSCELES, chosen from the estate's best Cabernet blocks. It is barrel-aged 21 months in French oak and bottled at 15.0% alcohol. The winery describes a deep ruby wine with ripe black cherry, blackberry jam and red apple skin layered with toasty barrel spice, vanilla, mocha and star anise, then a dry, full-bodied palate of red plum, black currant, mocha, leather and tobacco, closing long and savory with pepper, nutmeg and black tea over firm, fine-grained tannin and balancing acidity.
