Kafi Feni Pure Cashew Fruit Spirit

Kafi Feni is a bottled cashew feni, sold in the U.S. as the Heritage Spirit of India. Feni is Goa's native spirit, and cashew feni is made not from the nut but from the cashew apple, the fleshy fruit the nut hangs from. Cashew trees reached Goa through Portuguese trade from Brazil. In the traditional method only ripe cashew apples that have fallen naturally from the tree are used; they're de-seeded and crushed, historically by foot in a rock basin, and the juice ferments for several days in earthen pots with no added yeast. The ferment is then distilled in small copper pot stills, with the low first distillate, urrak, run again to make the finished feni. In 2009 cashew feni became the first Indian spirit to receive Geographical Indication status, meaning it can only come from Goa. Kafi is hand-crafted in small batches, and its published tasting notes describe a bouquet of floral violets and gardenias, then golden apple with a mild, spiced warmth and touches of honeysuckle, cashew and pineapple.
