Kapena Silver Tequila
Kapena was founded in 2016 by Mike Goto, a West Coast entrepreneur with family roots on Hawaii's Big Island; the name is an adopted Hawaiian word for captain. The tequila is made at NOM 1468 in Jalisco's Los Altos from 100% blue Weber agave, brick-oven cooked, roller milled, fermented with champagne yeast, and double distilled in pot stills with copper coils. Kapena Silver is the unflavored base of the lineup, the same tequila used for its li hing mui and Hawaiian chili infusions, bottled unaged at 40% ABV (80 proof). It took a silver award at the 2019 San Francisco spirits competition, and community reviewers have called it an excellent sipper. Kapena launched in Hawaii, expanded first to Nevada, and has grown bar by bar across the islands and the West Coast, sold through Johnson Brothers of Hawaii among others. Use it as a house tequila for margaritas and palomas, add fresh pineapple for an island twist, or sip it over ice.
