Kapriol's story starts in 1948, when Distilleria dell'Alpe first began crafting alpine herbal liqueurs in Bastia d'Alpago, high in the Italian Alps. The Maschio family, historic distillers from Conegliano, acquired the operation in 2002, and after two years of research, released this Old Tom expression at the end of 2015 — reviving that original 1948 liqueur recipe and reworking it into true gin form. Production still leans on genuine vintage equipment: juniper berries and a long list of alpine botanicals — bay leaf, angelica, chamomile, cardamom, caraway, coriander, gentian, lavender, hops, mint, oregano, rosehip, and rosemary — are infused in wheat spirit, then distilled through a pair of 1940s wood-fired bain-marie copper stills. True to Old Tom style, a touch of sugar is added, giving it a softer, more delicate sweetness than a standard dry gin, while the total absence of distilled citrus keeps things clean and easy to mix. Expect an intense, balsamic nose of juniper, rosemary, mint, and pine, followed by a harmonious palate of bay leaf, chamomile, caraway, and gentian, with the hops' bitterness keeping everything in balance. Bottled at 41.7% ABV, it makes a genuinely excellent Tom Collins.
