Kilchoman Sanaig is the sherried sibling of Machir Bay from Islay's farm distillery, founded by Anthony Wills at Rockside Farm in 2005 as the first new distillery on the island in 124 years. Named for a rocky inlet on the island's Atlantic coast, Sanaig reverses the flagship's recipe with roughly seventy percent ex-Oloroso sherry and thirty percent ex-bourbon casks, bottled at 92 proof, non-chill-filtered and naturally colored.
Fragrant heather, raisin, pear and orange peel lead the nose with waves of stone fruit, mixed spice and rich peat smoke, then overripe plum, red cherry and citrus give way to barbecue peat, toffee, oak and dark chocolate on the palate, finishing mouth-coating with mixed fruit, caramel, cinnamon, clove, brown sugar and lasting smoky sweetness.
